A five-level Cover-Count Maturity Model of the restaurant booking-app party-size stepper is now the kitchen's order
The Adaptive Metrics Lab has been asking which number a process actually locks. A new research poster from the School of Continuous Improvement answers that question at the restaurant booking app’s party-size stepper, and Hospitality and Events has already taken the answer as a plating rule.
Led by Dr Solveig Adeyemi, Lecturer, with Postdoctoral Fellow Joost Nwosu and Dr Thandiwe Solberg, Senior Lecturer and Convenor of Demo Quarter, the study scores 88 suburban dining rooms against five named levels of a Cover-Count Maturity Model. Across 6,214 sittings in a 14-week window, 53 percent of rooms never left Held — the cover at which the floor set the table. The mean seated-to-held ratio was 0.64.
Hospitality and Events now plates every official function at that Held cover, with no door-count override sustained for more than a single sitting. Leftover plates at Demo Quarter ran at 38 percent of the order. The release records the School’s decision to stop treating the door count as a correction of the locked cover.

The method paired booking-app extracts with door clickers and kitchen-ticket logs; thresholds were pre-registered. Dr Solberg said Demo Quarter “plated to the fire-limit because that was the number the booking had already locked. The leftover was the finding, not a catering error.”
Organisers have begun keying the stepper to a room’s seated-fire-limit so the function scores Level 3. A door-count audit is under design; the Held lock is not in scope for it.
